Red Onion & Tomato Kachumber

1 red Onions diced
1- 2 fresh green chilies, seeded and minced
1 cp ripe plum tomatoes diced
1 cp seedless English cucumber, diced
½ cp loosely packed fresh cilantro
2 tbsp lime juice from I lime
¼ tsp black pepper freshly ground
2 tbsp olive oil
½ tsp salt or to taste
Pinch of sugar

Place tomatoes, cucumber, onion, cilantro, green chilies in a large bowl

Add lime juice, black pepper, sugar and salt to taste.

Gently toss all the ingredients together. Make sure they are well coasted with the seasoning

Cover with a saran wrap and chill for a hour in the refrigerate.

Just before serving, gently toss the salad again.

Put into a serving dish and garnish with chopped cilantro.

Add extra lime juice, salt and pepper to adjust to personal taste ,

before serving
